Playing them all? Absolutely doable. Beating them all? If that means getting to the credits, also doable but a lot more time consuming. 100% them all? Probably not even theoretically possible anymore but also very, very unlikely to happen regardless (if they’ve got anything else to do in a day).

I have over 1000 games between steam and gog. I’ve played about ⅔s of them.
AverageMean play time is likely 30mins and only because of the dozen or less that I’ve put a few hundred hours into. Take those away and we’re looking at like 10mins each.I think project Gotham racing had an achievement to be #1 on the world leader board so I doubt thats going to be happening even if they’re still online.
