yeah, ketchup, pickles, and (most?) mustards have an acidic component that works really well in contrast to fatty things like cheese.
That’s not weird though. Cheese and pickle sandwiches are a thing. Now if you were to throw sauerkraut in there…
Kimchi grilled cheese is incredible, I would absolutely try sauerkraut grilled cheese.
