Zoom in center bottom of the plate. You’ll see the fat floating on the surface, but much the liquid is basically meat juice because this was plated quickly without enough rest time for the fish.
that looks like a regurgitated sludge, I’m sorry. Couldn’t even tell it was supposed to be food, let alone seafood, if I’m being honest…
