Im new to guns and still learning, but as far as i know, birdshot refers to the size of projectile inside of the shell that gets fired from the shotgun. You basically have 3 main types of ammo, birdshot, buckshot, and slugs. There are many options within each including lead free and for burd hunting I’ve heard you can get shells loaded with salt pellets.
I got a 12 gauge Mossberg 500 and a case of birdshot.
