Is priest synonymous with monks? I just categorize “monks” with more Eastern beliefs and wasn’t sure if those were popular in Poland.

No, but some catholic orders such as the Franciscans fit the “monk” denomination
I guess you are thinking of Buddhist monks, where these are likely catholic monks
Monks aren’t really priests, but they are religious. There are Christians monks in Europe and Buddhist monks in Asia.
